Yes you can change the file.
If you go to the Action List>SAPEE tab and then highlight the stream you want to modify, you can then use press the Editor button to open the editor window where you can change the server IP.
Note that if you are running a test with both client and server, you will also have to change IP of server on the Server associations tab.
