vSNE: After reboot the management IP address is set the the default value.

If you reboot the VM, when it comes online it defaults to 192.168.1.100 for a short time – this then changes to the IP address that was configured from the menu.  This was a deliberate design choice.
The vSNE will boot the system up with the default address and then assign the configured IP address later in the boot process because, otherwise, if the network initialization were to fail with the IP address you had configured then the system would be uncontactable. If it defaults to a known IP address (as it does) then you have a way to try and contact it.
